Labor Day weekend Cory and I headed to NM for a quick trip. The actual driving part of the trip was not so quick. Around this area everyone was leaving for the last holiday weekend to escape the heat, but we did eventually arrive.
We brought our empty bottles for a canning weekend. We woke up early and went to work. Cory however was in bed sick all morning. My parents being the wonderful people they are had most of the hard work of canning done for us. Almost all of the carrots were peeled and sliced. The chicken was also already cooked.
Cory working is magic with the pickles. As you can see we used both pressure cookers and had the big canning pot going, which made for lots of food getting canned.
We had a jar break.
We worked all Saturday until my dad had to perform a wedding. We came home and did the chicken and while is was in the pressure cooker we watched a movie. We canned in total 24 pints (23 because one broke) of carrots, 7 quarts of carrots, 7 pints of green beans, 14 quarts of pickles, 10 pints of chicken, and 7 jars of jalapeno jelly. I'd say it was a successful day of canning.
We stayed till Monday and had a great time with my parents. Thank you both so much for all your help and for all you do for us!
The next Monday Cory and I canned 14 quarts of pears. We're trying to be prepared. :)
